Protein Fudge (No-Bake)

Yield: 12 balls
Serving Size: ~30g
Per Serving (approx.): 142 calories | 4.8g protein | 9.9g fat | 9.9g carbs | 5.7g sugar

Ingredients:

  • 200 g chocolate (dark, semi-sweet, or your choice)

  • 72 g protein powder (vanilla or chocolate flavor recommended)

  • 40 g runny peanut butter

  • ⅓ cup plant-based milk (or milk of choice)

  • 2 tbsp maple syrup

  • 1 tbsp vanilla extract

Optional Coatings:

  • Cocoa powder

  • Icing sugar

  • Freeze-dried raspberries (crushed)

Instructions:

  1. Melt the chocolate in a heatproof bowl using a microwave (in 20-second bursts, stirring between) or a double boiler.

  2. Once melted, stir in the maple syrup, vanilla extract, and milk until smooth.

  3. Allow the mixture to cool slightly—this prevents the protein powder from clumping.

  4. Whisk in the protein powder and peanut butter until fully combined and smooth (if too thick add bit of water).

  5. Chill the mixture in the fridge for 15 minutes, just until firm enough to handle.

  6. Choose your shape:

    • For balls: Scoop and roll into 12 balls (~30g each). Roll in your choice of coating (cocoa, icing sugar, or freeze-dried raspberry).

    • For bars: Press the mixture evenly into a parchment-lined 8x8-inch pan. Chill further and slice into 12 squares.

  7. Store in the fridge for up to a week or freeze for longer shelf life.
