Why do you use Maple Sugar as your sweetener?

Maple sugar adds a delicious caramel flavor to the chocolate! But besides flavor, Maple Sugar has lots of other benefits that conventional refined sugar doesnt. It contains no artificial flavors or sweeteners and isnt produced using a chemical process like refined sugar. Maple sugar retains beneficial vitamins and minerals, such as, manganese, riboflavin, zinc, magnesium, calcium and potassium (Source here). There is also research indicating maple syrup can help fight free radical damage and inflammation in the body (Source here).Also, maple syrup doens’t contain any common allergens (dairy, soy, wheat, corn). Maple sugar is also lower on the glycemic index than regular sugar, which means it doesnt cause the same increase in blood sugar that white sugar does. And best of all Maple Syrup is a Canadian staple!

Are your cacoa beans ethically sourced?

The company we source beans through is Cocoa Supply. They are a small family business, who take their responsibilities within society seriously. They feel especially passionate about the impact on the environment and their small farmers.

When you use their products, you can rest assured that the farmers were paid prices far above the market value, had access to technical and logistics assistance and received our support in their communities with emphasis on education. They take pride in helping small farming communities thrive . To learn more about the beans click here.

We also source from Meridian Cacao. They are passionate about cacao transparency and they work directly with farmers to ensure they receive living wages for their cacao, and workers are treated with dignity and respect.

Do you deliver or ship your products?

Yes to both! $12.00 delivery within Calgary limits (partnered with Trexity). We can also offer shipping in Canada for a flat rate of $30.00. We do not ship in the summer months (June-August) or internationally at this time.

Does your chocolate contain any common food allergens?

None of the ingredients in our chocolate contain dairy, soy or gluten but we do use hazelnuts, cashews, pecans, coconut and oats. We are NOT a certified allergen free facility so if you have any severe food allergies it is best to avoid our product. If you have any questions about specific ingredients please feel free to contact us.

How is your chocolate made? What is Bean to Bar?

Bean to bar chocolate refers to chocolate made directly from the cacao bean and from scratch. A chocolate maker is someone who makes chocolate, whereas, a chocolatier is someone who makes confections from chocolate that has been made by someone else.

Our Process:

Sorting: It starts with hand sorting the cacao and making sure there aren’t any beans that don’t make the cut.

Roasting: The cacao beans are then slow roasted at just the right temperature to bring out the flavor notes we love. Chocolate brownies, fruits and nuts.

Grind/Conche: With our small but mighty melangers we first grind the nibs/sugar/cocoa butter (and other add-ins, like coffee, nuts) into a smooth liquid. Once it reaches the right particle size we let it run for additional time to drive away any acids that might effect the flavor.

Temper/Mold: Once the chocolate is done and ready to eat (the best part) we temper the chocolate with cocoa butter silk (which is essentially tempered cocoa butter) using the EZ Temper (magical machine!) this makes sure the chocolate has the right crystalline structure. Now its ready to pour into molds and set! Once its set we package and label and they are ready to sell :)
